For a friend's birthday I had some folks coming over for a party. I really didn't have time to bake a cake, and didn't want to buy one either. So I decided to go retro, and down and dirty, with a good old-fashioned Dump Cake. This was a favorite of my mom, who really was not a baker whatsoever, and we had many different version of these growing up. This version always turned out amazing!
It's really easy - just dump into a 13x9 baking dish one 15-oz. can of crushed pineapple, and one 21-oz. can of cherry pie filling. I swirl these together. Then spread a simple box mix of white cake over the top. Take 12 tablespoons of butter, sliced in little slices, and cover the top of the cake powder mix with the butter pats. Bake at 350 for an hour, until nicely browned.
I serve this with whipped cream, which I flavor/enhance with maraschino cherry juice until a light pink. Serve the cake warm with a dollop of the cream. If you want to make it really immersive and fun, give everybody a fork and have them attack right of the pan (yes, I said that).
Dig in!!!
