The final chapter in my new Perfect 10 Party Edition cookbook focuses on the only sit-down meal in the book - how to throw a stress-free holiday party dinner. And one holiday party staple in my house is my Kale Mashed Potatoes, a rich and decadent twist on standard old mashed potatoes. They are truly spectacular.
Cook the Potatoes: Combine five large russet potatoes (peeled and chopped into 1-inch chunks), 2 cloves garlic, 1 teaspoon of salt, and 2 tablespoons of butter in a large saucepan, and cover with cold water. Bring to a boil over medium-high heat. Reduce to a simmer, and cook until the potatoes are soft, about 20 minutes. Drain, then return potatoes to the pan and mash until smooth.
Prep the Kale: While the potatoes are cooking, heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 small diced onion, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook until the onions are softened, about 5 minutes. Add 2 cloves of minced garlic, and cook another minute. Add 12 ounces of chopped kale leaves and 1/2 cup of chicken broth and cook until kale is softened, about 10 minutes.
Put it all Together: To the still warm potatoes, add the kale mixture, eight ounces of mascarpone cheese, 1/2 cup of chicken broth, 6 tablespoons of butter, 3/4 cup of grated Parmesan, two teaspoons of salt, and another teaspoon of black pepper, and mix all together. Stir, cooking over low heat, until smooth and well combined.
Transfer to your favorite serving bowl, scatter more grated parmesan over the top. Serve with your favorite gravy on the side (I love my "Simply Fantastic Gravy" that is featured in the new cookbook as well).
