Strawberry Supreme Bday Cake


Today was one of those Saturdays I love, where I'm called upon to make a bday cake. I love making bday cakes. With the beautiful summer weather, I decided to lean into summer and make a beautiful and strawberry-packed "Strawberry Supreme Bday Cake." It's fresh, moist, pretty, and oh so good...

Make the Cake: Preheat oven to 350 degrees. Grease and lightly flour 3 standard round cake pans. In a large mixing bowl, combine one boxed white cake mix, a 3 oz box of strawberry gelatin, 4 tablespoons of flour, 1 cup vegetable oil, 1/2 cup sugar, 4 eggs, 1/2 cup milk, and about 1/2 cup of diced up fresh strawberries. Mix well, then divide the batter among the three cake pans. Bake for about 32 minutes, until done and not jiggly in the middle. Let them cool for 10-15 minutes, then invert onto wire racks to cool completely.

Make the Frosting: Beat together one stick of softened butter and one 8 ounce package of softened cream cheese, until fluffy. Beat in 3 1/2 cups powdered sugar, and then about 3/4 cup of diced strawberries, mashed. Mix until a beautiful creamy strawberry infused frosting is ready to go.

Put it Together: Frost the cakes, and then decorate with sprinkles, extra strawberry slices - whatever you prefer.
