Turkey Pesto Meatloaf


Meatloaf is a popular go-to comfort food these days, but full disclosure: I really intensely disliked (I try to avoid the word hate in my life, fyi) meatloaf as a kid. My mom made it old school...beef with hard-boiled eggs in the middle, slathered all over with a sticky ketchupy sauce. Gross.


Over the years, I've come to appreciate a good meatloaf - including plant-based, beef-based, and whatever other creative combination strikes my fancy. But nothing tops this recipe for Turkey Pesto Meatloaf. When I made this the other night for my blog, my discerning partner, who rarely raves about anything, declared it the best meatloaf he'd ever had, and the most beautiful looking. So there. Make it. Win people over. This will do it!

In a large bowl, combine together 2 pounds of lean ground turkey, 1/2 cup of pesto sauce (store bought is fine), 1 cup of chopped spinach leaves, 3 chopped green onions, 1/4 cup chopped parsley, 1/4 cup milk, 1/2 cup bread crumbs, a teaspoon each of kosher salt and ground pepper. Mix well, using your hands - really get in there!

Pack this into a 9x5-inch loaf pan, and bake at 350 for about 40 minutes. Slice and serve!
