Vegan Sausage and Peppers!


No, I'm not a vegan, but many of my friends are, and I try to honor that and cook vegan very often. Since fall has kicked in, I thought it would be fun to cook up a bunch of beautiful orange bell peppers, a ton of onions, and some vegan sausages and make a beautiful comfort food - vegan style - sausage and peppers.


Cook the sausages: I bought a package of my favorite vegan sausages, 8 in a pack, and sliced on the diagonal some very imperfect sized chunks. Then, in a large saucepan, I mixed 1 tablespoon of olive oil with a bunch of diced onions (to ensure the sausages add a bit of extra flavor). After a few minutes of sauteeing the onions, I added the sausages, and cooked until lightly browned, for about 5 minutes. I pour all of this into a bowl and set aside.


Cook the peppers: Using the same saucepan, cook a few tablespoons of olive oil. Once heated up, I threw in 3 sliced orange bell peppers, and one medium size sliced onion. Season well with kosher salt, and pepper. I stir frequently, until they soften and start to get brown, about 10-12 minutes. Then, add a few cloves of minced garlic, and cook for a few minutes, and then add in a tablespoon of red wine vinegar.


Mix together: Stir the sausages into the pepper/onion mix, and mix well. I stir in about a teaspoon of red pepper flakes, and a teaspoon of other spices (tonight I used dried basil and oregano).


Serve and enjoy!
