So, I'm back in Palm Springs this weekend, enjoying the beautiful weather. And tomorrow is my neighbor Ed's birthday, so I decided to cook a meal for his present, for him and amazing husband Kevin. When I asked what his favorite types of food are, he said either French (I was already lost at that moment), or comfort, which, if you've peeked at my cookbook, is what I'm all about. So, I decided to make a recipe from page 137 of the Perfect 10 Cookbook: Emiel's Bacon Cheeseburger Lasagn-YAY, named that since it's my son Emiel's favorite food. (He requests it every year on his birthday.) It's easy to make, but requires a bit of an assembly line, so I decided to double up the recipe and give him a full order. I made one for me, one to freeze, and one to package up nicely and drop off at some other friends' house in Palm Springs (they were ecstatic).
If you are freezing, I'd say complete all of the recipe in the book up until the baking... Do that part after you remove from the freezer, and then you will be ready to serve.
It's so addictive...so good...with every part of a bacon cheeseburger that you like all in one ooey-gooey lasagna dish. Enjoy!
